Monday : Cheesy noodles and a massive salad.
Tuesday : Whole chicken and veges in the dutch oven (thanks hubby!)
Wednesday : Homemade lasagna in the dutch oven (Martha online recipe)
Thursday : Burritos, and I'm hoping the avocados will be ripe in time for dinner!
Friday : Shrimp stir fry with local greens and rice
Saturday : Potato leek soup
Sunday : Chicken enchiladas (leftover chicken, anyone?)
Last weekend's storm made for some SERIOUSLY creative food choices. The gas stove top worked, not the oven. We began to use up what we had in the fridge, but tried to leave the freezer shut (except on Saturday night, when we decide it would be best for everyone if we ate the ice cream before it turned to soup).
All dairy and other perishables went into a snow-filled cooler outside. By the time our power came back on Monday morning, it was decided that the once frozen Danger Pies would be baked and eaten for breakfast. Yum.
